I’ve rediscovered my love of egg whites! Egg whites are very low in calories (17 calories per egg white), contain no fat or cholesterol, and are loaded with protein (3g each).
If you go to Safeway, you can buy an 18-count carton of eggs for about $3 and get 18 more for free! Amazing! That’s like, 8 cents an egg. No regular human would have a need for 36 eggs a week, but for the purposes of exercising and getting that six pack by summer’s end, it’s great. I just boil them all up and eat them throughout the day.
On Tuesday, we made Banana Bread Muffins! They were delicious…crispy on the outside, and warm and banana-y on the inside. We used a Tyler Florence recipe from Food Network for Banana Bread with Pecans, only we didn’t use pecans and baked them in muffin tins instead of a loaf pan.
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 overripe bananas
1 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
I recently visited my old high school, Taipei American School. While much was the same, from the blueberry bagels to the chairs and clocks to Mister Arnold’s sanguine view of the world, much had changed as well. All 3 libraries were completely overhauled, as were the track and the elementary school playground. One thing that had not changed was Roast Chicken Leg Thursdays — except…that we now have in our possession, the recipe for this world-famous dish! …for 1000 servings though, it has to be scaled down to non-ridiculous levels.
Santa brought me an early Xmas present! Looks like I’ll be pimpin’ canned corn and Fruit Naturals to you all very soon.
